Prepare the Waffles
In a large bowl, whisk together flour, baking powder, and salt. In another bowl, mix milk, eggs, and melted butter. Combine wet and dry ingredients until just mixed. Preheat waffle iron and cook batter according to manufacturer's instructions until golden brown.

Cook the Chicken
In a shallow dish, combine flour, salt, and pepper for dredging. In another dish, whisk the egg and buttermilk together. Dip chicken in the flour mixture, then into the egg mixture, and back into the flour. Heat oil in a large skillet over medium-high heat. Fry the chicken until golden brown and cooked through, about 6-8 minutes per side. Drain on paper towels.

Make the Sausage Gravy
In a skillet, cook the sausage over medium heat until browned. Remove sausage and drain excess fat, leaving a couple of tablespoons in the pan. Whisk in flour and cook for about 1 minute. Slowly add milk while whisking. Simmer until thickened. Stir in cooked sausage and season with salt and pepper to taste.

Assemble the Dish
Place a waffle on a plate, smother it with sausage gravy, sprinkle cheddar cheese on top, add fried chicken, and drizzle with hot sauce. Serve immediately.
