    Prepare the Home Fries

    In a skillet, heat olive oil over medium heat. Add diced potatoes, season with salt and pepper, and cook until golden brown and tender, about 15-20 minutes. Stir occasionally.

    Make the Herbed Hollandaise

    In a heatproof bowl, whisk together egg yolks and lemon juice. Place over a pot of simmering water, whisking constantly until thickened. Gradually add melted butter, whisking until combined. Stir in parsley, thyme, salt, and pepper.

    Poach the Eggs

    Bring a pot of water to a gentle simmer. Crack each egg into a small bowl and gently slide into the water. Poach for 3-4 minutes or until the whites are set but yolks are runny. Remove with a slotted spoon.

    Assemble the Benedict

    Toast the English muffins. On each half, layer honey glazed ham, a poached egg, and drizzle with herbed hollandaise. Serve with home fries on the side.
