Biscuits & Gravy Preparation

    Make the Biscuits

    Preheat your oven to 425°F (220°C). In a large bowl, mix flour, baking powder, baking soda, and salt. Cut in butter until the mixture resembles coarse crumbs. Stir in buttermilk until just combined. Turn dough onto a floured surface, knead gently, and roll to about 1 inch thick. Cut into rounds and place on a baking sheet. Bake for 12-15 minutes until golden.

    Prepare the Sausage Gravy

    In a skillet over medium heat, cook the sausage until browned. Sprinkle flour over the sausage and stir for 1-2 minutes. Gradually whisk in milk, stirring continuously until the gravy thickens. Season with black pepper and salt.

    Cook the Eggs

    In a separate pan, melt butter over low heat. Crack the eggs into the pan and cook until the whites are set but the yolks are still runny, about 3-4 minutes.

    Assemble the Dish

    Split the biscuits in half, ladle sausage gravy over each half, and top with the sunny side up eggs. Serve immediately.
