Prepare the BBQ Sauce

    Make the Sauce

    In a saucepan, combine prickly pear puree, ketchup, apple cider vinegar, brown sugar, smoked paprika, garlic powder, onion powder, salt, and black pepper. Cook over medium heat for 10 minutes, stirring occasionally. Set aside.

Grill the Prime Rib

    Season and Grill

    Preheat the grill to medium-high heat. Season the prime rib with salt, black pepper, and olive oil. Grill the prime rib for about 15-20 minutes, turning occasionally, until it reaches your desired doneness. Let rest for 5 minutes before slicing into strips.

Prepare the Mashed Potatoes

    Cook and Mash

    Peel and chop the potatoes into chunks. Boil in salted water until tender, about 15-20 minutes. Drain and return to the pot. In the same pot, melt butter and sauté minced garlic until fragrant. Add the potatoes back in with milk, salt, and black pepper. Mash until smooth and creamy.

    On a plate, serve a generous scoop of garlic mashed potatoes topped with grilled prime rib strips. Drizzle with prickly pear BBQ sauce and enjoy!
