Prepare the Oysters

Preheat your oven to 400°F (200°C). Carefully shuck the oysters and place them on a baking sheet. Keep the oyster liquor in the shells.

Make the Herb Mixture

In a skillet, melt the butter over medium heat. Add the shallots and garlic, cooking for about 2 minutes until softened. Stir in the spinach, parsley, thyme, and Anise liqueur. Cook until the spinach is wilted and the mixture is well combined. Season with salt and pepper.

Assemble the Oysters

Spoon the herb mixture evenly over each oyster. Top with breadcrumbs and grated Parmesan cheese.

Bake the Oysters

Bake in the preheated oven for about 10-12 minutes, or until the cheese is bubbly and golden brown.

Serve

Remove from the oven, let cool for a minute, and serve with lemon wedges.
