Lollipop Lamb Chops

Method

Preparation and Cooking

1

Prepare the Garlic Mash

Peel and chop the potatoes into quarters. Boil in salted water until fork-tender, about 15-20 minutes. Drain and return to the pot.

2

Mash the Potatoes

Add minced garlic, butter, and milk to the potatoes. Mash until smooth and creamy. Season with salt and pepper to taste. Keep warm.

3

Season the Lamb Chops

Rub the lamb chops with olive oil, salt, and black pepper. Let them marinate for at least 15 minutes.

4

Grill the Lamb Chops

Preheat the grill to medium-high heat. Grill the lamb chops for about 4-5 minutes on each side for medium-rare, or until desired doneness.

5

Prepare the Mint Vinaigrette

In a small bowl, combine chopped mint leaves, red wine vinegar, honey, and a pinch of salt. Mix well and set aside.

6

Serve

Place a scoop of garlic mash on each plate. Top with grilled lamb chops and drizzle with mint vinaigrette.
