Season the Pork
Generously season the Duroc pork porterhouse with salt and black pepper on both sides.

Sear the Pork
In a large skillet, heat the olive oil over medium-high heat. Add the pork and sear for about 4-5 minutes on each side until golden brown and cooked to your desired doneness. Remove from the skillet and let rest for 5 minutes.

Finish the Sauce
Stir in the heavy cream and fresh thyme. Simmer for 5 minutes until the sauce thickens slightly. Season with salt and pepper to taste.

Serve
Slice the rested pork porterhouse and serve with the Calvados apple cream sauce drizzled on top.
