    Prepare the Pine Nut Butter

    In a small bowl, combine the unsalted butter, pine nuts, minced garlic, and chopped parsley. Mix well until all ingredients are fully combined. Set aside.

    Wrap the Bison Filet

    Take the bison filet and season it with salt and black pepper on both sides. Wrap the filet with the jalapeño bacon slices, securing them with toothpicks if necessary.

    Grill the Filet

    Preheat a grill or char-broiler to high heat. Place the wrapped bison filet on the grill and cook for about 4-5 minutes on each side for rare, or until it reaches your desired level of doneness.

    Serve

    Once cooked, remove the filet from the grill and let it rest for a couple of minutes. Top with the prepared pine nut butter before serving.
