Prepare the Shrimp
In a bowl, season the shrimp with salt and black pepper. Allow to marinate for about 10 minutes.

Wrap the Shrimp
Take each shrimp and place a small amount of casero cheese inside. Wrap each shrimp with a slice of jalapeño bacon, securing it with a toothpick if necessary.

Cook the Shrimp
Heat olive oil in a large skillet over medium heat. Add the wrapped shrimp and cook for 3-4 minutes on each side, or until the bacon is crispy and the shrimp are cooked through.

Prepare the Red Chili Cream
In a small saucepan, heat the red chili sauce over low heat. Stir in a splash of water if needed to achieve a creamy consistency.

Once cooked, remove the shrimp from the skillet and serve on a platter with the red chili cream drizzled over the top. Garnish with lime wedges.
