Preparing Uji Green Tea

    Boil Water

    In a kettle, bring 500 ml of water to a boil over medium heat.

    Steep Tea Leaves

    Once the water is boiling, remove it from the heat and add 2 tablespoons of Uji green tea leaves. Let it steep for 3-5 minutes, depending on your desired strength.

    Strain and Cool

    After steeping, strain the tea into a bowl or pitcher and allow it to cool to room temperature.

Making Umeshu

    Prepare Ume Plums

    Wash 500 g of ume plums thoroughly and remove any stems. Pat them dry with a clean cloth.

    Combine Ingredients

    In a clean glass jar, layer the ume plums at the bottom. Pour in 750 ml of shochu or vodka and then add 300 g of sugar on top.

    Seal and Store

    Seal the jar tightly and store it in a cool, dark place for at least 6 months. Shake the jar gently once a week to help dissolve the sugar.

    Combine with Green Tea

    After 6 months, strain the ume plums out of the liquid. Mix the ume-infused alcohol with the cooled Uji green tea to create your Uji Green – Tea Umeshu.
