Method

Preparing the Base Mixture

  1. 1

    Rinse the Black Rice

In a fine mesh strainer, rinse the black rice under cold water until the water runs clear.

  2. 2

    Cook the Black Rice

In a medium saucepan, combine the rinsed black rice, 2 cups of water, and 1 tsp of salt. Bring to a boil over medium heat.

  3. 3

    Simmer

Once boiling, reduce the heat to low, cover the saucepan, and let it simmer for about 30-35 minutes or until the rice is tender and water has been absorbed.

  4. 4

    Fluff the Rice

Remove the saucepan from heat and let it sit covered for 5 minutes. Fluff the rice with a fork before serving.

Preparing the Vegetable Topping

  1. 5

    Sauté the Garlic

In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.

  2. 6

    Add Mushrooms

Add the sliced mushrooms to the skillet and cook until they are browned and tender, about 5-7 minutes.

  3. 7

    Incorporate Spinach

Stir in the spinach and cook until wilted, about 2-3 minutes. Add 1 tablespoon of soy sauce and stir to combine.

  4. 8

    Add Sesame Seeds

Sprinkle 1 tablespoon of sesame seeds over the vegetable mixture and stir everything together for another minute.

Assembling the Dish

  1. 9

    Plate the Base

Spoon a generous portion of the cooked black rice onto a plate.

  2. 10

    Top with Vegetables

Spoon the sautéed vegetable mixture over the black rice.

  3. 11

    Garnish

Sprinkle chili flakes to taste and add chopped green onions on top before serving.
