    Prepare the Yuzu

    Wash the yuzu fruits thoroughly under running water to remove any dirt. Cut the yuzu in half and juice them. You should aim to extract as much juice as possible. Save the juice and set aside the halved fruits.

    Prepare the Syrup

    In a large saucepan, combine the water and sugar. Heat over medium heat, stirring occasionally until the sugar fully dissolves. Once dissolved, bring the mixture to a gentle boil and remove from heat.

    Combine Ingredients

    Add the yuzu juice to the syrup mixture and stir well. Then, take the halved yuzu fruits and add them into the mixture as well. Let the mixture cool down to room temperature.

    Add Alcohol

    Once the mixture is cooled, add the sake and shōchū. Stir to combine thoroughly.

    Bottle and Age

    Transfer the mixture into clean glass bottles. Seal tightly and store in a cool, dark place for at least 2 weeks to allow the flavors to meld together. For best results, age for up to 6 months.
