    Wash and Prepare Ume Fruits

    Gently wash the ume fruits under cold water to remove any dirt. Pat them dry with a clean towel. Inspect the fruits and remove any that are damaged or bruised.

    Sterilize the Jar

    Choose a large glass jar with a tight-sealing lid. Boil the jar in water for 10 minutes to sterilize it. Allow it to cool completely before use.

Mixing

    Layer Ingredients

    In the sterilized jar, layer the ume fruits at the bottom. Sprinkle the granulated sugar evenly over the fruits.

    Add Alcohol

    Slowly pour the shochu or vodka over the layered ume fruits and sugar, ensuring that all ingredients are completely submerged in the liquid.

Maturation

    Seal and Store

    Seal the jar tightly with the lid. Store the jar in a cool, dark place for at least 6 months to allow the flavors to develop. Shake the jar gently every few weeks to help dissolve the sugar.

    Taste and Serve

    After 6 months, taste the umeshu. If you prefer a sweeter taste, you can add more sugar at this stage. Once satisfied, strain the liquid through a fine mesh strainer into a clean bottle. Serve chilled or use in cocktails.
