Preparing the Rice

Cook the Rice
Rinse 1 cup of white rice under cold water until the water runs clear. In a pot, combine the rinsed rice with 2 cups of water. Bring to a boil, then reduce the heat to low, cover, and simmer for 18-20 minutes until the rice is tender. Remove from heat and let it sit covered for 5 minutes.

Prepare the Vegetables
While the rice is cooking, slice 1 medium onion and 1 medium bell pepper into thin strips. Cut 1 cup of broccoli florets into smaller pieces.

Sauté the Vegetables
In a large skillet, heat 1 tablespoon of oil over medium heat. Add the sliced onion, bell pepper, and broccoli. Sauté for about 5-7 minutes until the vegetables are tender but still crisp. Season with salt and pepper to taste.
Cooking the Protein

Prepare the Teriyaki Sauce
In a small saucepan, combine 1 cup of soy sauce, 0.5 cups of brown sugar, 2 tablespoons of rice vinegar, minced garlic (2 cloves), and grated ginger (1 tablespoon). Cook over medium heat until the sugar dissolves.

Thicken the Sauce
In a small bowl, mix 1 tablespoon of cornstarch with 2 tablespoons of water. Add this mixture to the saucepan and stir until the sauce thickens, about 2-3 minutes. Remove from heat.

Cook the Protein of Choice
Choose between chicken, shrimp, or salmon. For chicken, cut 1 large breast into bite-sized pieces and sauté in the same skillet as the vegetables until cooked through, about 5-7 minutes. For shrimp, cook 200 grams in the skillet for about 3-4 minutes until pink. For salmon, place 1 medium fillet in the skillet skin-side down, cooking for 4-5 minutes per side until cooked through.
Assembling the Bowl

Combine the Ingredients
In bowls, place a serving of the cooked white rice at the bottom. Top with the sautéed vegetables and your choice of protein. Drizzle with the teriyaki sauce.

Sprinkle sesame seeds and sliced green onions on top for garnish.
