Preparing the Burger or Chicken

    Form the Patties

    In a bowl, combine the ground beef or chicken with salt and black pepper. Mix gently and form into 4 equal patties.

    Heat the Grill or Skillet

    Heat a grill or skillet over medium-high heat and add olive oil to prevent sticking.

    Cook the Patties

    Place the patties on the grill or skillet and cook for about 5-7 minutes on each side, or until they reach an internal temperature of 165°F (75°C) for chicken and 160°F (71°C) for beef.

    Add Cheese

    During the last minute of cooking, place a slice of smoked Gouda cheese on each patty to melt.

Preparing the Toppings

    Cook the Bacon

    In a separate skillet, cook the bacon over medium heat until crispy. Remove and place on paper towels to drain excess grease.

    Grill the Onions

    Slice the onion into rings and grill them on the same skillet or grill until softened and slightly charred.

    Make the Dijon Aioli

    In a small bowl, mix together the Dijon mustard and mayonnaise until well combined.

Assembling the Burger

    Toast the Buns

    Lightly toast the burger buns on the grill or in the skillet.

    Build the Burger

    Spread the Dijon aioli on the bottom half of each bun, add the cooked patty with melted Gouda, top with crispy bacon and grilled onions, then place the top half of the bun.
