Method

Muffin Preparation

  1. 1

    Preheat the Oven

Preheat your oven to 375°F (190°C) to ensure it is hot enough for baking.

  2. 2

    Prepare Muffin Tin

Grease a standard muffin tin with non-stick spray or line with paper muffin liners.

  3. 3

    Mix Dry Ingredients

In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt until well combined.

  4. 4

    Mix Wet Ingredients

In another bowl, beat the eggs, then add milk, melted unsalted butter (cooled), and vanilla extract. Mix until smooth.

  5. 5

    Combine Ingredients

Pour the wet ingredients into the dry ingredients. Stir gently until just combined. Do not overmix; a few lumps are okay.

  6. 6

    Fill Muffin Tin

Evenly distribute the batter into the prepared muffin tin, filling each cup about 2/3 full.

  7. 7

    Bake

Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center comes out clean.

Topping Preparation

  1. 8

    Prepare Cinnamon Sugar

In a small bowl, mix together the cinnamon sugar.

  2. 9

    Butter the Muffins

As soon as the muffins are out of the oven, brush them with melted unsalted butter and sprinkle the cinnamon sugar on top.

  3. 10

    Cool Down

Allow the muffins to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
