Preparation

    Prepare the Corned Beef

    If using pre-cooked corned beef, slice it thinly against the grain. If cooking from raw, boil it in water with spices until tender, then let it cool before slicing.

    Prepare the Sauerkraut

    Drain the sauerkraut in a colander to remove excess liquid. Rinse it briefly under cold water and let it drain again.

    Prepare the Cheese

    Cut the Swiss cheese slices to fit the size of your rye bread.

Assembly

    Assemble the Sandwich

    Take two slices of rye bread and spread a generous amount of Thousand Island dressing on one side of each slice.

    Layer the Ingredients

    On one slice of bread, layer the sliced corned beef, followed by a layer of sauerkraut, and then the Swiss cheese. Place the other slice of bread on top, dressing side down.

Cooking

    Toast the Sandwich

    Heat a skillet over medium heat. Melt 1 tablespoon of butter in the skillet. Once melted, place the assembled sandwich in the skillet. Cook for 3-4 minutes until the bottom is golden brown.

    Flip and Cook

    Spread 1 tablespoon of butter on the top side of the sandwich. Carefully flip it over and cook for an additional 3-4 minutes until the other side is golden brown and the cheese is melted.

Serving

    Serve the Reuben

    Remove the sandwich from the skillet and let it sit for a minute. Slice it in half and serve with additional Thousand Island dressing on the side.
