Pork Preparation

    Season the Pork

    Rub the pork shoulder with salt, black pepper, garlic powder, onion powder, and cayenne pepper evenly on all sides.

    Cook the Pork

    Place the seasoned pork shoulder in a slow cooker. Pour BBQ sauce over the pork, cover, and cook on low for 8-10 hours or high for 4-6 hours until the pork is tender and easily shreds.

    Shred the Pork

    Once cooked, remove the pork from the slow cooker and shred it using two forks. Mix in additional BBQ sauce to taste.

    Prepare the Onions and Peppers

    Slice the onions and bell peppers into thin strips.

    Grill the Vegetables

    In a skillet, heat olive oil over medium heat. Add the sliced onions and peppers, and sauté until they are soft and slightly caramelized, about 8-10 minutes.

Assembly

    Assemble the Pulled Pork Sandwich

    Toast the buns if desired. Place a generous portion of shredded pulled pork on the bottom half of the bun. Top with grilled onions and peppers, and finish with slices of pepper-jack cheese. Place the top half of the bun on top.

    Serve

    Serve immediately while warm, with extra BBQ sauce on the side if desired.
