Activate Yeast
In a mixing bowl, combine warm water, active dry yeast, and granulated sugar. Let it sit for about 5 minutes until frothy.

Make Dough
Add all-purpose flour and salt to the yeast mixture. Mix until a dough forms. Knead the dough on a floured surface for about 5-7 minutes until smooth and elastic.

Preheat Oven
Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

Shape Pretzel Bites
After the dough has risen, punch it down and divide it into small pieces (about 1 inch each). Roll each piece into a ball.

Boil the Bites
In a large pot, bring 8 cups of water and baking soda to a boil. Carefully drop the pretzel bites into the boiling water for 30 seconds, then remove and place on the prepared baking sheet.

In a mixing bowl, combine the shredded sharp cheddar cheese, softened cream cheese, beer, garlic powder, onion powder, hot sauce, salt, and black pepper.

Using a hand mixer or stand mixer, beat the mixture until smooth and creamy. Adjust seasoning to taste.
