Prepare Rice

Cook the Rice
In a medium saucepan, combine 2 cups of white rice with 4 cups of water. Bring to a boil over medium-high heat, then reduce the heat to low and cover the pot. Let it simmer for about 18-20 minutes, or until the rice is cooked and water is absorbed. Remove from heat and let it sit covered for an additional 5 minutes.

Fluff the Rice
After the rice has rested, remove the lid and fluff the rice with a fork. Set aside to cool slightly.

Prepare Pickled Onions
If you do not have pre-made pickled onions, you can quickly pickle red onions by soaking thinly sliced onions in a mixture of equal parts vinegar and water for 15-30 minutes.

Glaze with Teriyaki
Once cooked, drizzle with teriyaki sauce to glaze the protein. Set aside.
Assemble Bowl

Layer the Ingredients
In a bowl, start with a base of the cooked white rice. Arrange the diced mango, sliced avocado, cucumber, pickled onions, and crispy onion strips on top of the rice.

Place the teriyaki glazed salmon, shrimp, or ahi tuna on top of the arranged toppings.
