Prepare the Fruits
Wash and slice the fresh peaches, lemons, and oranges into thin wedges. Set aside.

Muddle the Mint
In a large pitcher, add the fresh mint leaves and gently muddle them with a muddler or the back of a spoon to release their oils.
Mixing

Combine Ingredients
Add the sliced peaches, lemons, and oranges to the pitcher with the muddled mint.

Add Liquids
Pour in the white wine, peach schnapps, and pineapple juice into the pitcher. Stir gently to combine all ingredients.

Sweeten the Sangria
Add granulated sugar to the mixture and stir until the sugar is fully dissolved.
Chilling

Chill the Sangria
Cover the pitcher with plastic wrap or a lid and refrigerate for at least 2 hours to let the flavors meld together.
Serving

Serve the Sangria
Before serving, add soda water to the pitcher for a refreshing fizz. Stir gently and serve over ice in glasses. Garnish with additional mint leaves if desired.
