Prepare Corned Beef

    Cook the Corned Beef

    In a large pot, combine the corned beef, water, and pickling spice. Bring to a boil over high heat, then reduce to a simmer. Cover and cook for about 3 hours or until the beef is tender. Remove from pot and let it rest before slicing.

Prepare Home Fries

    Cook the Potatoes

    Peel and cube the potatoes. Heat olive oil in a large skillet over medium heat. Add the potatoes, salt, and black pepper. Cook, stirring occasionally, until golden brown and crispy, about 15-20 minutes.

Caramelize Onions

    Caramelize the Onion

    In a separate skillet, melt butter over medium heat. Slice the onion and add it to the skillet. Cook slowly, stirring occasionally, until the onions are golden brown and caramelized, about 15-20 minutes.

Cook Eggs and Assemble

    Cook the Eggs

    In the skillet with the home fries, push the potatoes to the side and crack the eggs into the pan. Cook to your liking (sunny-side up, over-easy, etc.).

    Add Peppers and Cheese

    Chop the bell peppers and add them to the skillet. Once the eggs are nearly finished, sprinkle Swiss cheese over the top to melt.

Prepare Sriracha Aioli

    Make the Aioli

    In a small bowl, mix mayonnaise, sriracha, and chopped parsley. Adjust sriracha to taste.

Serve

    Plate the Hash

    On a plate, layer the home fries, top with sliced corned beef, caramelized onions, eggs, and melted Swiss cheese. Drizzle with sriracha aioli before serving.
