Pickling Onions

Prepare Pickled Onions
In a medium bowl, combine the thinly sliced red onion, white vinegar, water, sugar, and salt. Stir to dissolve the sugar. Pour the mixture into a jar and refrigerate for at least 30 minutes to pickle.
Making Slaw

Prepare the Slaw
In a large bowl, combine the shredded cabbage, shredded carrots, rice vinegar, sugar, and salt. Toss well to combine. Let sit for 15 minutes to allow the flavors to meld.
Frying Shrimp

Prepare the Shrimp
Set up a breading station with three shallow bowls. In the first bowl, place the all-purpose flour mixed with salt and black pepper. In the second bowl, whisk the eggs. In the third bowl, add the panko breadcrumbs.

Bread the Shrimp
Dredge each shrimp in flour, shaking off the excess. Dip into the egg, then coat with panko breadcrumbs. Set aside on a plate.

Fry the Shrimp
In a large skillet, heat the vegetable oil over medium-high heat. Once hot, carefully add the breaded shrimp in batches, frying until golden brown and crispy, about 2-3 minutes per side. Remove and drain on paper towels.
Assembling the Bahn Mi

Assemble the Sandwich
Slice the baguettes in half lengthwise. Spread a layer of mayonnaise on each side. Layer with fried shrimp, slaw, pickled onions, cucumber slices, and chopped cilantro. Drizzle sriracha on top to your preference. Close the sandwich and serve immediately.
