Fried Haddock

    Prepare the Batter

    In a large bowl, combine flour, cornstarch, baking powder, salt, and black pepper.

    Make the Batter

    Gradually add cold water to the dry ingredients, whisking until smooth and slightly thick.

    Heat Oil

    Heat vegetable oil in a large, deep skillet or fryer to 350°F (175°C).

    Batter the Haddock

    Dip each haddock fillet into the batter, allowing excess to drip off.

    Fry the Haddock

    Carefully place the battered fillets into the hot oil. Fry for about 4-5 minutes per side or until golden brown and cooked through.

    Drain the Haddock

    Remove the fried haddock and drain on paper towels.

Tartar Sauce

    Make the Tartar Sauce

    In a bowl, mix together mayonnaise, dill pickle relish, lemon juice, chopped capers, and fresh dill until well combined.

Coleslaw

    Mix the Vegetables

    In a large bowl, combine shredded cabbage and shredded carrot.

    In a separate small bowl, whisk together mayonnaise, apple cider vinegar, sugar, salt, and black pepper.

    Pour the dressing over the cabbage and carrot mixture. Toss until the vegetables are well coated.

    Refrigerate for at least 30 minutes before serving to allow flavors to meld.
