Chicken Marinade

Marinate the Chicken
In a large bowl, combine the buttermilk, hot sauce (if using), salt, and black pepper. Add the chicken thighs, ensuring they are fully submerged. Cover and refrigerate for at least 1 hour, or overnight for best results.

Prepare the Breading
In a shallow dish, whisk together the flour, cornstarch, paprika, garlic powder, onion powder, salt, and black pepper. Remove the marinated chicken from the refrigerator and let it drain slightly.

Bread the Chicken
Dredge each piece of chicken in the flour mixture, ensuring an even coating. Shake off any excess flour and set aside on a plate.

Fry the Chicken
In a large skillet or deep fryer, heat oil to 180°C (350°F). Carefully add the breaded chicken pieces, working in batches if necessary to avoid overcrowding. Fry for 5-7 minutes on each side, or until golden brown and cooked through. Remove and drain on paper towels.

Make the Coleslaw
In a large bowl, mix together the shredded cabbage, shredded carrots, mayonnaise, apple cider vinegar, sugar, salt, and black pepper. Toss until well combined. Refrigerate until ready to serve.
Assembly

Assemble the Sandwich
Toast the burger buns lightly, if desired. Place a piece of fried chicken on the bottom half of each bun, top with coleslaw and pickles, and drizzle with your choice of buffalo, Nashville, or BBQ sauce. Finish with the top half of the bun.
