    Prepare the batter

    In a large bowl, whisk together the all-purpose flour, cornstarch, baking powder, salt, and black pepper. Gradually add the beer (or sparkling water) and mix until smooth.

    Heat the oil

    In a deep frying pan or a heavy pot, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Batter and fry the haddock

    Dip each haddock fillet into the batter, allowing excess to drip off. Carefully place the battered fillets in the hot oil and fry for about 4-5 minutes on each side or until golden brown and cooked through. Remove and drain on paper towels.

    Prepare the potatoes

    Peel the russet potatoes and cut them into thick strips (about 1/4 inch thick).

    Soak the fries

    Soak the cut potatoes in cold water for at least 30 minutes to remove excess starch.

    Fry the potatoes

    Heat vegetable oil in a deep fryer or large pot to 350°F (175°C). Drain the soaked potatoes and fry them in batches for about 5-7 minutes until golden and crispy. Remove and drain on paper towels, then season with salt.

Coleslaw

    Prepare the slaw

    In a large bowl, combine the shredded cabbage and shredded carrot.

    Make the dressing

    In a separate bowl, whisk together mayonnaise, apple cider vinegar, sugar, salt, and black pepper.

    Pour the dressing over the cabbage and carrot mixture. Toss well to combine and refrigerate for 30 minutes before serving.

Tartar Sauce

    Mix the sauce

    In a small bowl, combine mayonnaise, chopped dill pickles, lemon juice, capers, salt, and black pepper. Stir until well combined.
