    Scramble the Eggs

    In a bowl, crack the 3 eggs and whisk them until fully combined. Add a pinch of salt and pepper to taste.

    Cook the Eggs

    Heat a non-stick skillet over medium heat and add a small amount of butter. Pour in the whisked eggs and stir gently until they're cooked through. Remove from heat and set aside.

    Prepare the Bread

    While the eggs are cooking, take 2 slices of bread and spread butter on one side of each slice.

    Toast the Bread

    Place the bread slices butter-side down in a toaster or on a skillet until golden brown. Remove from heat.

    Prepare the Potatoes

    Wash and peel the 2 medium potatoes. Cut them into small cubes.

    Sauté the Vegetables

    Dice the small onion and bell pepper. In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the potatoes, onion, and bell pepper, and season with salt and black pepper.

    Cook the Home Fries

    Cook the mixture for about 15-20 minutes, stirring occasionally, until the potatoes are golden brown and tender.

    Cook the Protein

    In another skillet, cook the 2 pieces of bacon or sausage patties over medium heat until crispy and cooked through. Drain excess fat on a paper towel.
