Chicken Cutlet Preparation

Prepare the Chicken

Pound the chicken breasts to an even thickness using a meat mallet for even cooking.

Set up Breading Station

In one bowl, place flour mixed with salt and pepper. In another bowl, beat the eggs. In a third bowl, mix breadcrumbs with Parmesan cheese.

Bread the Chicken

Dredge each chicken breast in flour, shaking off excess. Dip into beaten eggs, then coat with breadcrumb mixture, pressing to adhere.

Fry the Chicken

In a large skillet, heat olive oil over medium-high heat. Fry chicken cutlets until golden brown on both sides, about 3-4 minutes per side. Drain on paper towels.

Sauté Garlic

In a saucepan, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.

Make the Sauce

Add crushed tomatoes, oregano, basil, salt, pepper, and sugar to the saucepan. Stir to combine and simmer for 15-20 minutes, stirring occasionally.

Assembly

Toast Ciabatta

Slice ciabatta rolls in half and toast them until golden.

Assemble the Sandwich

Place a fried chicken cutlet on each roll, top with marinara sauce, and a slice of provolone cheese. Add fresh basil leaves.
