Prepare Cajun Chicken

Season the Chicken
In a bowl, combine Cajun seasoning, olive oil, salt, and black pepper. Rub this mixture over the chicken breasts until evenly coated.

Grill the Chicken
Preheat your grill or grill pan over medium-high heat. Grill the chicken for about 6-7 minutes on each side or until fully cooked and the internal temperature reaches 165°F (74°C). Remove from grill and let it rest while you prepare the pasta.
Cook Pasta

Boil Water
In a large pot, bring salted water to a boil. Once boiling, add the fettuccine pasta.

Cook Pasta
Cook the pasta according to package instructions until al dente, usually about 8-10 minutes. Reserve 1/2 cup of pasta water, then drain the rest.
Make Creole Alfredo Sauce

Sauté Vegetables
In a large skillet, melt the butter over medium heat. Add minced garlic, sliced onions, and bell peppers. Sauté for about 5-7 minutes until the vegetables are soft.

Add Cream and Seasoning
Pour in the heavy cream and bring it to a simmer. Stir in the Creole seasoning and Parmesan cheese. Mix well until the cheese is melted and the sauce is creamy.

Combine Pasta and Sauce
Add the cooked fettuccine to the skillet with the sauce. Toss to combine, adding reserved pasta water as needed to achieve desired consistency.
Serve

Slice Chicken and Plate
Slice the grilled Cajun chicken into strips and place it on top of the pasta. Serve immediately, garnished with additional Parmesan cheese if desired.
