Prepare the cheese mixture
Grate the Parmesan, Gouda, and Cheddar cheeses into a large mixing bowl. Mix the three cheeses together until well combined.

Assemble the sandwich
Take two slices of sourdough bread and spread butter generously on one side of each slice. On the unbuttered side of one slice, add a generous amount of the cheese mixture. Place the other slice of bread on top, buttered side facing out. Repeat with the remaining slices to create a second sandwich.
Grilling

Grill the sandwich
Heat a skillet or griddle over medium heat. Once hot, place the assembled sandwich in the skillet. Cook for about 3-4 minutes until the bottom is golden brown and the cheese begins to melt. Carefully flip the sandwich and grill the other side for another 3-4 minutes until golden brown and the cheese is fully melted.

Slice and serve
Once both sides are golden brown and the cheese is melted, remove the sandwich from the skillet. Allow it to cool for a minute, then slice the sandwich in half. Serve immediately while hot and gooey.
