Preparation

Prepare Cauliflower Steak

1. Prepare the Cauliflower

Preheat your oven to 425°F (220°C). Cut the cauliflower head into thick slices (about 1-inch) to create the 'steaks'.

2. Season the Cauliflower

In a small bowl, mix the olive oil, cumin, paprika, turmeric, coriander, salt, and black pepper. Brush the mixture onto both sides of the cauliflower steaks.

3. Roast the Cauliflower

Place the seasoned cauliflower steaks on a baking sheet lined with parchment paper. Roast in the preheated oven for about 25-30 minutes, flipping halfway through, until golden brown and tender.

Cook Lentils and Rice

4. Sauté Aromatics

In a large pot, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion is translucent (about 5 minutes).

5. Cook Lentils

Add the brown lentils and vegetable broth to the pot. Bring to a boil, then reduce heat to low, cover, and simmer for about 20 minutes until lentils are tender.

6. Add Rice

Stir in the basmati rice, salt, and black pepper. Cover and cook for an additional 15 minutes until the rice is cooked and the liquid is absorbed. Remove from heat and let sit covered for 5 minutes.

Caramelize Onions

7. Sauté Onions

In a skillet, heat the butter and olive oil over medium heat. Slice the onions thinly and add them to the skillet. Sprinkle with salt and sauté, stirring occasionally, until they are deeply caramelized (about 15-20 minutes).
