    Clean the Mushrooms

    Using a damp cloth, gently wipe the shiitake, cremini, and oyster mushrooms to remove any dirt. Avoid soaking them in water as they can absorb moisture.

    Chop the Mushrooms

    Slice the shiitake and cremini mushrooms into thick slices. Tear the oyster mushrooms into smaller pieces, if they are large.

    Prepare Aromatics

    Mince the garlic and finely chop the shallot.

Cooking

    Heat the Oil

    In a large skillet, heat 2 tablespoons of olive oil over medium heat until shimmering.

    Sauté Aromatics

    Add the minced garlic and chopped shallot to the skillet. Sauté for about 2-3 minutes until they are fragrant and the shallot is translucent.

    Add the Mushrooms

    Increase the heat to medium-high and add the prepared shiitake, cremini, and oyster mushrooms to the skillet. Sauté for 5-7 minutes, stirring occasionally, until the mushrooms are golden brown and tender.

    Deglaze with Sherry

    Pour in 100 ml of sherry and scrape the bottom of the skillet to release any flavorful bits. Allow the sherry to simmer for 2-3 minutes until it reduces slightly.

    Season the Dish

    Sprinkle in 1 teaspoon of salt and 1 teaspoon of freshly ground black pepper. Stir well to combine all ingredients.

    Finish with Parsley

    Remove the skillet from heat and stir in 2 tablespoons of chopped fresh parsley for added flavor and color.
