Method

Salmon Preparation

  1. 1

    Prepare the Salmon

Preheat your grill to medium-high heat. Brush the salmon fillets with olive oil, then season with salt and black pepper.

  2. 2

    Chargrill the Salmon

Place the salmon fillets on the grill and cook for about 5-6 minutes per side, or until cooked through and flaky. Remove from grill and set aside.

Lobster Preparation

  1. 3

    Cook the Lobster

In a skillet over medium heat, melt the butter. Add the minced garlic and cook until fragrant, about 1 minute. Add the lobster tails and drizzle with lemon juice. Cook for 5-7 minutes, or until the lobster is cooked through and opaque.

Asparagus Preparation

  1. 4

    Prepare the Asparagus

In a bowl, toss the asparagus spears with olive oil, salt, and black pepper.

  2. 5

    Grill the Asparagus

Place asparagus on the grill and cook for 4-5 minutes until tender and slightly charred, turning occasionally.

Bearnaise Sauce Preparation

  1. 6

    Make the Bearnaise Sauce

In a small saucepan, combine shallots, white wine vinegar, and fresh tarragon over medium heat. Simmer until reduced by half, then let cool slightly.

  2. 7

    Whisk the Egg Yolks

In a heatproof bowl, whisk together the egg yolks and the reduced vinegar mixture. Place over a pot of simmering water and whisk until thickened.

  3. 8

    Incorporate Butter

Gradually whisk in melted butter until the sauce is smooth and creamy. Season with salt and black pepper to taste.
