Season the Steak

Remove the porterhouse steak from the refrigerator and let it sit at room temperature for about 30 minutes. This allows for more even cooking.

Apply Seasoning

Generously season both sides of the steak with kosher salt, black pepper, and garlic powder. Rub the seasonings into the meat to ensure they adhere well.

Preheat the Grill or Pan

Preheat your grill to high heat or heat a cast-iron skillet over medium-high heat. If using a skillet, add the olive oil once hot.

Cook the Steak

If using a grill, place the steak directly onto the grill grates. If using a skillet, place the steak in the hot oil. Cook for about 6-8 minutes on each side for medium-rare, or until the internal temperature reaches 130-135°F (54-57°C). Adjust cooking time as necessary for desired doneness.

Rest the Steak

Once cooked to your liking, remove the steak from the heat and let it rest for 10 minutes. This allows the juices to redistribute within the meat.

Slice and Serve

After resting, slice the steak against the grain into thick slices. Serve with fresh rosemary sprigs and lemon wedges on the side to enhance the flavors.
