    In a medium bowl, combine the dried porcini mushrooms and water. Let them soak for about 30 minutes, or until they are soft and fully rehydrated. Once done, remove the mushrooms, reserving the soaking liquid.

    After rehydrating, chop the porcini mushrooms into small pieces. Make sure to strain the soaking liquid through a fine mesh sieve to remove any sediment, and set it aside for later use.

    In a large skillet, heat the olive oil over medium heat. Add the finely chopped shallots and sauté for about 3-4 minutes, or until they are translucent. Then, add the minced garlic and fresh thyme leaves, cooking for an additional 1-2 minutes until fragrant.
