Method
Preparation
- 1
Prepare the Garlic
Preheat your oven to 400°F (200°C). Cut the tops off the garlic bulbs to expose the cloves. Drizzle the exposed cloves with olive oil and wrap the bulbs in aluminum foil.
- 2
Roast the Garlic
Place the wrapped garlic bulbs in the oven and roast for about 30-35 minutes, or until the cloves are soft and caramelized. Once done, allow them to cool slightly before squeezing the roasted garlic into a bowl.

Cooking
- 4
Brown the Butter
In a skillet over medium heat, add the unsalted butter. Allow it to melt and then continue to cook, stirring frequently, until it begins to foam and turn golden brown, about 3-5 minutes. Remove from heat and set aside.
- 5
Cook the Steak
In a large skillet or grill pan over high heat, add a little oil if needed and let it heat up. Add the seasoned steak and sear for about 4-5 minutes on each side for medium-rare, or until it reaches your desired doneness. Use a meat thermometer for accuracy (130°F/54°C for medium-rare).
- 6
Add Herbs and Garlic
During the last minute of cooking, add the roasted garlic and fresh herbs (rosemary and thyme) to the skillet with the steak. Spoon the brown butter over the steak to enhance the flavor.
