Crust

Prepare the crust
Preheat your oven to 350°F (175°C). In a mixing bowl, combine chocolate cookie crumbs, melted butter, and sugar. Mix until well combined.

Bake the crust
Press the mixture into the bottom of a 9-inch springform pan evenly. Bake in the preheated oven for 10 minutes. Remove and let cool.
Cheesecake Filling

Prepare the filling
In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy. Gradually add the granulated sugar and mix until combined.

Add liqueur and eggs
Add the Irish cream liqueur, eggs, and vanilla extract to the cream cheese mixture. Mix until just combined, being careful not to overmix.

Bake the cheesecake
Pour the cheesecake filling over the cooled cookie crust. Bake in the oven at 325°F (160°C) for about 50-60 minutes or until the center is set and only slightly jiggly. Turn off the oven and let the cheesecake sit in the oven for an additional hour. Remove and cool completely at room temperature, then refrigerate for at least 4 hours or overnight.

Make the ganache
In a small saucepan, heat the heavy cream over medium heat until it begins to simmer. Remove from heat and add the chopped dark chocolate. Let sit for 5 minutes, then whisk until smooth.

Cool the ganache
Allow the ganache to cool slightly before pouring it over the chilled cheesecake. Spread evenly and refrigerate until set.
Kahlua Coffee Mousse

Prepare the gelatin
In a small bowl, combine the gelatin powder with water and let it sit for about 5 minutes to bloom.

Make the mousse
In a separate bowl, whip the heavy cream and powdered sugar until soft peaks form. Gently fold in the Kahlua and the bloomed gelatin until combined.

Layer the mousse
Spread the Kahlua mousse over the ganache layer on the cheesecake and refrigerate until set, about 1-2 hours.
Serving

Top the cheesecake
Before serving, drizzle chocolate sauce, add whipped cream, sprinkle white chocolate curls, and top with brownie bits and chocolate cigarettes.

Carefully remove the cheesecake from the springform pan, slice, and serve chilled.
