Preparation

1

Prepare the Corn Mixture

In a large mixing bowl, combine sweet corn kernels, all-purpose flour, granulated sugar, baking powder, and salt. Mix well until all dry ingredients are evenly distributed.

2

Combine Wet Ingredients

In another bowl, whisk together the eggs, milk, melted unsalted butter, and vanilla extract until smooth.

3

Combine Mixtures

Gradually pour the wet mixture into the dry ingredients while stirring gently. Be careful not to overmix. Fold in the fresh blueberries until just combined.

Cooking

4

Preheat the Oven

Preheat your oven to 350°F (175°C). Grease a baking dish or line it with parchment paper.

5

Bake the Mixture

Pour the batter into the prepared baking dish and spread it evenly. Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted in the center comes out clean.

6

Prepare the Topping

While the corn and blueberry bake, prepare the topping by mixing blueberry syrup with powdered sugar in a small bowl until smooth.

Serving

7

Serve the Dish

Once baked, remove from oven and let cool for a few minutes. Cut into squares and serve warm, drizzled with blueberry syrup and garnished with fresh mint leaves.
