Lobster Stock Preparation

    Make the Lobster Stock

    In a large pot, combine the lobster shells, water, chopped carrot, celery, onion, minced garlic, bay leaf, dried thyme, salt, and black peppercorns.

    Simmer the Stock

    Bring the mixture to a boil over high heat. Once boiling, reduce the heat to low and let it simmer for about 45 minutes.

    Strain the Stock

    After simmering, strain the stock through a fine-mesh sieve to remove solids, and set the stock aside.

Bisque Preparation

    Sauté Shallots

    In a large saucepan, melt the butter over medium heat. Add the minced shallots and sauté until they are translucent, about 3-4 minutes.

    Add Brandy

    Carefully add the brandy to the pan and allow it to simmer for 2-3 minutes, stirring occasionally.

    Add Lobster Stock

    Pour in the reserved lobster stock and bring the mixture to a gentle simmer.

    Incorporate Cream

    Gradually stir in the heavy cream and continue to simmer for an additional 10 minutes.

    Add Sherry and Lobster Meat

    Stir in the sherry and the chopped lobster meat. Allow the bisque to simmer for another 5 minutes.

    Finish with Chives

    Remove from heat and stir in the chopped chives. Season with additional salt and pepper to taste, if desired.
