    Prepare the Lobster Tails

    Using kitchen shears, carefully cut down the top of each lobster tail, stopping at the end but not cutting through the bottom shell. Gently pull the lobster meat out and lay it on top of the shell. This is called butterflying.

    Make the Drawn Butter

    In a small saucepan, melt the unsalted butter over low heat. Add minced garlic and stir until fragrant, about 1-2 minutes. Remove from heat and set aside.

    Season the Lobster

    Sprinkle the lobster meat with paprika, salt, and black pepper to taste.

Cooking

    Preheat the Grill

    Preheat your grill to medium-high heat (about 375°F to 400°F).

    Grill the Lobster

    Place the butterflied lobster tails on the grill, meat side up. Cook for about 6-8 minutes, basting with the drawn butter halfway through.

    Finish and Serve

    Remove the lobster tails from the grill and squeeze fresh lemon juice over the top. Serve immediately with the remaining drawn butter on the side.
