Gelato Preparation

Prepare the Base
In a medium saucepan, combine the milk, heavy cream, and granulated sugar. Heat over medium heat, stirring occasionally, until the sugar is dissolved and the mixture is hot but not boiling.

Add Flavor
Remove from heat and stir in the vanilla extract. Let cool to room temperature, then chill in the refrigerator for at least 4 hours or overnight.

Churn
Once chilled, pour the mixture into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency. Transfer to a container and freeze for at least 2 hours before serving.

Make Fruit Puree
If using fresh fruit, chop it into small pieces and blend in a blender until smooth. If using citrus fruits, juice them and combine with the pulp.

Prepare Sugar Syrup
In a saucepan, combine water and granulated sugar. Heat over medium heat until the sugar is fully dissolved. Remove from heat and let it cool.

Chill Mixture
Pour the mixture into a shallow container and freeze for about 1 hour. Stir every 15 minutes to break up ice crystals until the sorbet is firm.

Serve
Once the sorbet is fully frozen and fluffy, scoop into bowls or cups and serve immediately.
