    Prep the Potatoes

    Wash the Yukon Gold potatoes thoroughly under running water to remove any dirt. Cut them into quarters to ensure they cook evenly.

    Prepare the Garlic

    Peel the garlic cloves and set them aside. You can either chop them roughly or keep them whole, depending on your preference for garlic flavor.

    Chop the Chives

    Finely chop the fresh chives and set them aside for garnishing later.

Cooking

    Boil the Potatoes

    In a large pot, add the quartered potatoes and cover them with water. Add 1 tablespoon of salt to the water. Bring to a boil over high heat, then reduce to a simmer and cook for about 15-20 minutes, or until the potatoes are fork-tender.

    Add Garlic

    During the last 5 minutes of cooking, add the peeled garlic cloves to the pot to cook alongside the potatoes.

    Drain and Smash

    Once the potatoes and garlic are cooked, drain them thoroughly in a colander. Return the potatoes and garlic to the pot.

    Add Butter and Cream

    Add the unsalted butter and heavy cream to the drained potatoes and garlic. Use a potato masher or fork to smash them together until you reach your desired consistency, either chunky or creamy.

    Season and Serve

    Season with additional salt and pepper to taste. Stir in the chopped chives and mix gently. Serve warm as a side dish.
