Drain and Dry
After soaking, drain the potatoes and pat them dry with paper towels to remove excess moisture.

Make the Batter
In a large mixing bowl, combine the all-purpose flour, cornstarch, baking powder, garlic powder, onion powder, paprika, salt, and black pepper. Mix well.

Add Water
Slowly add 1 cup of ice-cold water to the dry ingredients, whisking until the batter is smooth and free of lumps. The batter should be thick enough to coat the back of a spoon.
Frying

Heat the Oil
In a deep frying pan or pot, heat 4 cups of vegetable oil over medium-high heat until it reaches 350°F (175°C). Use a thermometer to check the temperature.

Coat the Potatoes
Take a handful of the dried potato sticks and dip them into the batter, ensuring they are well-coated.

Drain and Serve
Once cooked, remove the fries from the oil using a slotted spoon and drain them on paper towels. Season with additional salt if desired before serving.
