Season the Steak

Take the filet mignon out of the refrigerator and let it come to room temperature for about 30 minutes. Pat it dry with paper towels. Season both sides generously with salt, black pepper, and garlic powder.

Prepare the Pan

In a large skillet, heat the olive oil over medium-high heat until it starts to shimmer.

Cooking

Sear the Filet Mignon

Once the oil is hot, carefully place the filet mignon in the skillet. Sear for 3-4 minutes without moving it, until a nice crust forms.

Flip and Add Flavor

Using tongs, flip the steak and add the optional butter and fresh herbs to the pan. Continue to cook for another 3-4 minutes for medium-rare, or longer depending on your desired doneness.

Resting and Serving

Rest the Steak

Remove the filet mignon from the skillet and place it on a cutting board. Tent it loosely with aluminum foil and let it rest for 5 minutes.

Slice and Serve

Slice the filet mignon against the grain and serve it warm, drizzled with pan juices if desired.
