Preheat your oven to 375°F (190°C).

Prepare the Potatoes
Wash and peel the Russet potatoes. Slice them thinly (about 1/8 inch thick) and set aside.

Prepare the Leeks
Trim the roots and dark green tops off the leeks. Slice them in half lengthwise and rinse under cold water to remove any dirt. Chop into small pieces.

Add Cheese
Sprinkle 1 cup of cheddar cheese over the leeks. Season with salt and black pepper.

Add the remaining potatoes and leeks on top, followed by another cup of cheddar cheese. Season again with salt and black pepper.

Add Cream and Cheese
Pour the heavy cream evenly over the layered potatoes and leeks. Top with the remaining cup of cheddar cheese.

Cover the baking dish with aluminum foil and bake in the preheated oven for 45 minutes. Remove the foil and bake for an additional 15-20 minutes, or until the top is golden brown and bubbly.
