Preparing the Bourbon Glaze

Combine Ingredients
In a medium saucepan, combine the Elijah Craig bourbon, brown sugar, soy sauce, Dijon mustard, minced garlic, and chopped thyme. Stir well to combine.

Simmer the Glaze
Place the saucepan over medium heat and bring the mixture to a boil. Reduce the heat to low and let it simmer for about 15-20 minutes, or until the glaze has thickened. Remove from heat and set aside.

Pat the Berkshire pork chops dry with paper towels. Season both sides with salt and black pepper.
