Method
Puff Pastry Preparation
Prepare Puff Pastry
Preheat your oven to 400°F (200°C). Roll out the puff pastry sheets on a lightly floured surface to fit your pie dish. Place one sheet in the bottom of the dish and trim any excess.
Chill the Pastry
Place the pastry-lined pie dish in the refrigerator while you prepare the filling.
Apple Filling Preparation
Mix the Apples
In a large mixing bowl, combine the sliced apples with brown sugar, granulated sugar, cinnamon, nutmeg, lemon juice, bourbon, and cornstarch. Toss until the apples are evenly coated.
Fill the Pie
Remove the pastry from the refrigerator and fill it with the apple mixture, spreading it evenly.
Oat Streusel Preparation
Prepare the Streusel
In a separate bowl, combine rolled oats, flour, brown sugar, melted butter, and a pinch of salt. Mix until crumbly.
Top the Pie
Sprinkle the oat streusel mixture generously over the apple filling.
Baking the Pie
Bake
Place the pie in the preheated oven and bake for about 45-50 minutes, or until the filling is bubbly and the streusel is golden brown. Check for doneness by inserting a knife; the apples should be tender.
Cool the Pie
Once baked, remove the pie from the oven and let it cool for at least 15 minutes before serving.
Serving the Pie
Serve with Sauce
Drizzle dulce de leche sauce over each slice of pie when serving.
Add Gelato
Top each slice with a scoop of salted caramel gelato and garnish with fresh apple slices.
