Bread Pudding

Prepare the Bread
Preheat your oven to 350°F (175°C). Tear the stale bread into bite-sized pieces and place them in a large mixing bowl.

Combine Bread and Custard
Pour the custard mixture over the torn bread and let it soak for about 15 minutes, stirring occasionally to ensure all the bread absorbs the liquid.

Add Bananas
Slice the ripe bananas and gently fold them into the soaked bread mixture.

Bake the Pudding
Transfer the mixture into a greased baking dish and bake for 45-50 minutes or until the top is golden brown and a knife inserted comes out clean.

Add Butter and Rum
Remove from heat and carefully add the butter, stirring until melted. Then, add the dark rum and return to low heat.

Finish the Sauce
Slowly add the heavy cream while stirring continuously until smooth. Allow it to simmer for a few minutes until slightly thickened.
Bruleed Bananas

Prepare Bananas
Slice the ripe bananas in half lengthwise and place them cut side up on a baking sheet.

Caramelize Sugar
Sprinkle the granulated sugar evenly over the cut sides of the bananas.

Brulee the Bananas
Using a kitchen torch, carefully caramelize the sugar until it forms a golden crust. If you don't have a torch, you can place them under a broiler for a few minutes, watching closely.
Serving

Assemble the Dessert
Spoon servings of the warm bread pudding into bowls, top with bruleed bananas, and drizzle generously with the rum caramel sauce.

Finish with a scoop of vanilla gelato on top of each serving before serving warm.
