Cook the Pasta
In a large pot, bring salted water to a boil. Add macaroni pasta and cook according to package instructions until al dente. Drain and set aside.

Roast the Poblano Chiles
Preheat your oven to 400°F (200°C). Cut the poblano chiles in half lengthwise, remove seeds, and place them on a baking sheet. Drizzle with olive oil and sprinkle with salt. Roast in the oven for about 20 minutes or until the skin is blistered. Remove from the oven and let cool. Once cool, peel off the skin and chop the chiles.

Add the Cheese
Reduce heat to low, and stir in the cream cheese until melted. Then add the sharp cheddar, Gruyere, and Parmesan cheeses. Stir until completely melted and smooth. Season with black pepper, garlic powder, and onion powder.
Combine and Bake

Combine Pasta and Sauce
Add the cooked macaroni and chopped roasted poblano chiles to the cheese sauce. Stir until the pasta is well coated.

Prepare the Topping
In a small bowl, mix the breadcrumbs, chopped parsley, and olive oil until well combined.

Bake
Preheat your oven to 350°F (175°C). Pour the macaroni and cheese mixture into a greased baking dish. Sprinkle the breadcrumb mixture evenly over the top. Bake for 25-30 minutes or until the top is golden and crispy.
