    Prepare the Marinade (Optional)

    In a bowl, combine lemon juice, honey, and Dijon mustard. Mix well and set aside.

    Season the Lamb Chops

    Pat the lamb chops dry with paper towels. Season both sides generously with salt and black pepper.

    Chop the Garlic and Rosemary

    Mince the garlic cloves and finely chop the fresh rosemary. Combine them in a small bowl.

    Marinade the Lamb (Optional)

    If using the marinade, add the lamb chops to the bowl and coat them well. Let them marinate for at least 30 minutes at room temperature or up to 2 hours in the refrigerator.

    Preheat the Grill or Pan

    Heat a grill or a large skillet over medium-high heat. Add the olive oil and allow it to heat up.

    Cook the Lamb Chops

    Once the oil is hot, add the lamb chops to the grill or skillet. Sear for about 4-5 minutes on one side until a nice crust forms.

    Flip and Finish Cooking

    Flip the lamb chops and add the garlic and rosemary mixture on top. Cook for an additional 4-5 minutes for medium-rare, or longer if desired.

    Rest and Serve

    Remove the lamb chops from the heat and let them rest for 5 minutes before serving. This allows the juices to redistribute.
